BiographyRoxana Valdés-Ramos, B.Sc, M.Sc, D.Sc., was born in Mexico and educated in Mexico and London, trained as a nutritionist and immunologist. She obtained her master’s degree in Human Nutrition at the London School of Hygiene and Tropical Medicine in 1989 and her doctoral degree in Clinical Biology at the National Politechnic Insitute (IPN) in 1998, in Mexico City. From 1990 to 2002 she worked as a researcher at the National Institute of Perinatology and between 2002 and 2004 she taught at the School of Medicine of the National Autonomous University (UNAM), both in Mexico City. In 2002 she moved to the School of Medicine at the University of the State of Mexico in Toluca, where she is still working. She has been coordinator of the master’s and doctoral programs in Health Sciences as well as of the Centre for Research and Graduate Studies in Health Sciences at the same University. Her main research interests are centered in Nutrition, Immunology and Chronic Diseases. Dr. Valdés-Ramos has over 50 publications in scientific journals and book chapters. She has received funding from the National Science and Technology Council (CONACyT), Texas A&M University, University of North Texas as well as the institutions for which she has worked. She received the Young Investigator’s Award from the International Union of Nutritional Sciences, as well as the State of Mexico’s Science and Technology Award. She has been part of the National ReseShe has served in various societies, including the Mexican College of Nutritionists (CMN), Nutrition Society (SNAC, Mexico), American Society of Nutrition (ASN) and the International Society for Immunonutrition (ISIN). She is a peer-reviewer of various national and international journals, as well as grants reviewer for CONACyT and the National Research Council of Argentina.
